This Thankful Thursday I am so thankful for my blessings. I look at my single mom life and see so many special blessing. Yes, there are time I miss being married but my thankfulness comes from appreciating the qualities that God has given me. Within me is faith to raise my teen kids knowing that God is leading our family. Within me is courage to take steps in life even when I'm scare, like my recent relocation. Within me is resourcefulness to work a full-time job, own my Apron Senorita business, and be self-supporting. My blessing start with God, are seen through my children, and are hopefully shared with you!

On to my kitchen redo - I love my brown stoneware set but I'm getting bored with the solid tones. I want some fun dinnerware for summer. I definitely have a budget that I need to stick to, so I'm going to have to get very creative.
Here is a vibrant tableware set that is just perfect for the Apron Senorita kitchen. The place mats look easy enough for me to make. I'm getting my craft on. I have so many fabrics that I can sew different ones for each setting. I saw colorful dinnerware that the grocery store very similar to this and it wasn't very expensive. With my single-mom budget I have to look for inspiration ideas and then recreate them for a fraction of the price. It is very easy to do and just as fun.
To match the plates I thought I would bring out one of my casual eating favorites; Frito pie salad.
The recipe is so easy that my kids will be able to make it for themselves when they leave to college.

Ingredients
1 bag Frito corn chips
1 bag of shredded cheddar cheese
1 bottle of Ranch dressing
1 container of sour cream
2 cans chili w/beans
1 head of lettuce
2 med. tomatoes
1 diced onion
1 avocado

Directions
Take a large salad bowl, layer the bottom of bowl with corn chips. Heat your chili on the stove top or microwave, set aside. Chop up lettuce, tomatoes, avocados, and onions, set aside. Take your heated chili, pour over the top of Fritos, top with cheese for a quick melt. Garnish with lettuce, tomatoes, avocados, and onions. Add your choice of Ranch Dressing or Sour Cream.
