Chicken of the Sea

My trying to eat healthier means I've got to plan my meals better, especially my lunches at work.  When I don't plan ahead, I end-up eating fast-food or skipping meals. There is a kitchen area in my office, so there is no excuse to not pack a good healthy lunch.  Also, there are several cans of tuna in my pantry at home that I can use to make my lunch. There are many tuna recipes online that can be made quick and are tasty.  Most mothers have so much to do during the day that lunch has to be healthy in order to keep us fueled up.  I'm so excited to work with tuna as a base ingredient because I get to incorporate lots of other foods that I truly enjoy eating like avocados and tomatoes.  Funny that it is called "Chicken" of the Sea and I don't like canned chicken. 
.


Moving on to fancier seafood.  This past weekend we went to Red Lobster for lunch Saturday. I'm so proud of my 15 year old daughter Gina.  She drove us to lunch, a 20 mile drive on the interstate.  She was a bit nervous and I was a lot nervous, but she did very well.   She has a driver's permit and must complete 20 hours of on-road driving before getting her full driver's licence when she turns 16 years old in May.  Which also is when her orthodontist said her braces will be taken off.  Oh my little baby girl is growing up too fast.

  3. yummy I also love tuna, and I have been good taking my lunch 2 a week which is GOOD for me but I need to do it more often.lol
