Time for some good food. The selection of fresh fish at my local grocery store is impressive. I am amazed at all the different types of fish and the best part is the price is right. Being a single-mom means I have to budget and find the best deals! I usually buy Talapia or Flounder. I like the thin-cut fillets because I add it to salads or have it in corn-tortilla tacos. It is healthy and delicious. So join me for some fun Tex-Mex Fish Tacos. Lets set the table, put on a gorgeous apron, and start cooking!! The quickest way for me to cook is on the stove top in a pan that has been lightly coated with non-stick spray. My kids love grilled talapia with a kick. I have a seasoning called "Five Pepper". It is spices and pepper flakes that smell and taste amazing. I like my tacos topped with guacamole and grilled pineapples. My kids add shredded cheese to just about everything, including fish tacos. Don't forget to have some chips & salsa and cold drinks. It's party time.

Ingredients
6 (6-oz.) talapia fillets
4 limes
1 teaspoons salt
1 teaspoon red pepper flakes
6 flour or corn tortillas
1 can of pineapple rings1 cup of chopped cilantro
Toppings: Guacamole, salsa, lettuce, tomato, shredded cheese, lime, cilantro

Preparation
Rinse fish and pat dry
Place fish in a shallow dish and squeeze lime over fillets
Season fish with salt and red pepper flakes
Lightly grease a large non-stick pan, and heat at medium temperature
Grill for 4 minutes or until fish flakes with a fork, turning once.
Place pineapple rings in the pan and grill until softened
Cut fillet and pineapples into chunks
Place on warmed tortillas
Top fish tacos with garnishments as desired
