Carrot Cake with Cream Cheese Frosting

I am in the mood for carrot cake. In fact, carrot cake is my favorite kind of cake. My kids and I will be driving to south Texas tomorrow to spend the Easter holiday with family. It is a huge fiesta celebration on Sunday with lots of good food and tons of Easter eggs. My nieces Samantha and Alyssa make delicious cupcakes, so maybe we can bake together this weekend.  They will probably have great recipes, where as I will be happy with Betty Crocker cake mix.  There are awesome recipes below that I can try.  I can't bake as well as I can sew but it is never too late to practice.  I hope you have delicious desserts and fun times this Easter holiday.
