Caldo - Mexican Chicken Soup

It has been a long week for us at home.  My son is finally feeling better but he still needs to be careful to eat light.  I'm going to make a pot of "Caldo" chicken soup this weekend. It is easy to make and very economical.  I don't make it as good as my mother.  Soup is perfect for this weather because we are having temperatures in the 30's-40's.   I also like making a large pot of soup because it always tastes better the next day.  Tex-Mex chicken soup often includes slices of avocado or it is served with Spanish rice on the side.  I'm getting home-sick thinking about my mom's homemade chicken soup.
