Caldo - Mexican Chicken Soup

" Some people come into our lives and quickly go.
Some people move our souls to dance.
They awaken us to new understandings with the passing whisper of their wisdom.
Some people make the sky more beautiful to gaze upon.
They stay in our lives for awhile, leave footprints in our heart, and we are never ever the same."
Chicken Soup for the Soul

It has been a long week for us at home.  My son is finally feeling better but he still needs to be careful to eat light.  I'm going to make a pot of "Caldo" chicken soup this weekend. It is easy to make and very economical.  I don't make it as good as my mother.  Soup is perfect for this weather because we are having temperatures in the 30's-40's.   I also like making a large pot of soup because it always tastes better the next day.  Tex-Mex chicken soup often includes slices of avocado or it is served with Spanish rice on the side.  I'm getting home-sick thinking about my mom's homemade chicken soup.
