Today I'm talking about berries and bandits. I've got an awesome blueberry parfait that is low in calories and big in taste. I'm also on the prowl for a silverware bandit at my home. If I ever find a spoon I will sit with my parfait and enjoy.
Want a quick and nutritious treat? Make a blueberry parfait with slices of oranges in the morning and refrigerate covered for up to four hours. Fresh fruit is best if in season but if not, there are fabulous choices in the frozen section at your grocer. Sprinkle with wheat germ or granola just before serving. It is great for breakfast, lunch, or a healthy snack. The air tight glass containers are perfect to preserve the parfait. The jars are inexpensive at the Dollar Store, so don't overpay at a fancy kitchen store. Remember to keep the expenses as low as the calories!! Take the parfait to work, refrigerate, and have as an afternoon pick-me-up snack. Note: this is your treat so you can change the fruit to whatever you prefer. Enjoy!
Ingredients
1 1/2 tablespoons turbinado sugar1/2 teaspoon grated orange rind
2 (7-ounce) containers reduced-fat plain yogurt
2 cups fresh blueberries
2 cups orange sections
1/4 cup wheat germ or granola
Preparation
Combine first 3 ingredients in a small bowl, stirring until blended. Spoon 1/4 cup blueberries into each of 4 tall glasses. Spoon about 2 1/2 tablespoons yogurt mixture over blueberries in each glass. Add 1/4 cup orange to each serving. Repeat layers with remaining blueberries, yogurt mixture, and orange. Sprinkle 1 tablespoon wheat germ or granola over each serving; serve immediately.
There is a silverware bandit at our house. There are so many missing pieces that I'm going to have to buy a silverware set this weekend. I found these online at World Market for a very good price. Hopefully these don't get lost. I still don't get how we lose them. There aren't any little kids in our house, just me and my 2 teen kids. No one eats upstairs in their bedroom, so that can't be possibility. Maybe we accidentally throw them away when we are cleaning up? We use the dishwasher regularly so there aren't any hiding there. All I know that today I had to use a fork to spread jelly on my toast; not very pretty. LOL :)

ReplyDeleteYour theory on the spoons ending up in the garbage is probably right. That's how we lose them at my house. They go right into the trash can with the paper plate. Then the delicate little dears are too grossed out to reach in and retrieve them. Enjoy your new silverware!

ReplyDeletecheck under the beds. When I was a teenager we weren't supposed to eat in our rooms but we did and then we hid the dishes under our bed. LOL. My mom always laughed about how she would have to come find all her missing dishes and silverware.
