What's for Supper? My kids ask that as soon as I walk in the door. Yesterday we had pasta with grilled chicken with sauteed onion and topped with melted cheese. I'm a 1 dish wonder girl. Today I think we will have the Texas Chalupa Bowl. It already have all the ingredients at home, so it should be easy, quick, and delicious.
Texas Chalupa Bowl
* Brown beef, add taco seasoning and diced onions, drain well and set aside
* Cut up vegetables; shredded lettuce, diced tomatoes, cilantro, or any others of your choice
* Prepare extra toppings as desired: guacamole, jalapenos, sour cream, shredded cheese, etc.
* Simmer canned whole beans on slow heat
* Heat oil in pan for frying corn tortillas
* Fry tortillas 1 at a time. Make the bowl shape by holding down the middle of tortilla with round potato-masher utensil.
* Assemble the Texas Chalupa Bowl in layers: beans, beef, veggies, toppings, as desired
