Finally Friday

It has been a fantastic week.  Things are buzzing with holiday cheer.   The company Christmas party was so much fun.  Today I'm going to take Christmas gifts to a couple of Pre-K classrooms that we adopted for Christmas.  I had so much fun shopping for them.  Sometimes the best thing to do is see Christmas through a child's eye. 


This week we also found out that my son Vincent has been accepted to St. John's University in New York.  St. John's is one of America's leading Catholic universities and is known for giving students the knowledge, skills and confidence to serve others while achieving personal and professional success.  Vincent has already been accepted to the Univeristy of Texas, but he still has time decide which school he will attend in Fall 2011.


I'm also proud of my daughter Gina, who is a high-school sophomore. She got her mid year grades this week.  She has a 3.985 GPA.  My little brain child is amazing.  God blessed her with charm, courage, intelligence, and a dash of diva.    This week she made Christmas cookies for brother.  Gina took the time to decorate each cookie with different color icing and sprinkles.  I found the cookie recipe below at Ocean Spray.  It sounds delicious.


OATMEAL CRANBERRY WHITE CHOCOLATE CHUNK COOKIES
INGREDIENTS:   2/3 cup butter or margarine, softened,  2/3 cup brown sugar,  2 large eggs, 
1 1/2 cups old-fashioned oats,  1 1/2 cups flour,  1 teaspoon baking soda,  1/2 teaspoon salt
1 6-ounce package Ocean Spray® Craisins® Original Dried Cranberries
2/3 cup white chocolate chunks or chips

DIRECTIONS:   Preheat oven to 375ºF. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chunks. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack.  Makes approximately 2 1/2 dozen cookies.

  1. How cute to adopt pre-k classroom I could imagine all the joy you will be giving to these kids. Congratulations for your son acceptance to St John's and granddaughter's GPA. You look so young it's hard yo believe you have a granddaughter that big!
