This Thankful Thursday I am so thankful for my much needed rest lastnight. My kids are with my mother and then they go off to summer camp. I'm on my own for a few days. Last night I went to bed at 8:30pm. It was raining and the lightning was spectacular. It was the perfect weather to cuddle up in bed for an early night's rest.
For Tablescape Thursday I found bright yellow tableware. I love the yellow set of cups and especially the pitcher. They are from Macy's and will make the the perfect summer treat. It reminds me of the 1970's yellow kitchen ware that was so common. When I was a kid, we used to have a yellow set of containers for sugar, cookies, etc. I wish we could have kept some of them.
Yummy, Pineapple Upside Down Cupcakes!
Pineapple Upside Down Cupcakes
Ingredients:
1 - 20 ounce can crushed pineapple
2/3 cup of light brown sugar
1/3 cup melted butter
1 - Small jar maraschino cherries
1 box of yellow cake mix
1/2 cup pineapple juice
3 eggs

Preparation:
Preheat oven to 350 degrees F. Grease 24 muffin cups. Drain canned pineapple, reserving liquid in a glass measuring cup. Combine butter and brown sugar, then spoon mixture into muffin cups. Place one cherry in the center of each cup. Top with 1 tablespoon pineapple. Make cake mix according to directions, substituting pineapple juice for water. Spoon the cake batter into muffin cups. Bake for 20 to 25 minutes. Allow to rest in pan for 2 minutes and then invert onto serving platter.

Yellow is a great happy color. I hope to incorporate it into my dining room one day when I finnish it. LOL! Having a night to yourself and a good rest is key to having a happy Moma. Bonus: You are so much more happy to see your kids when they get back beacuse you started missing them so much.
